If you’re a fan of Indian food, there’s good reason for you to celebrate! Taking our desi flavours global recently, Indian pastry chef Zareen Shaukat claimed the fourth place in the World Tapas Competition 2023 held in Spain.
The chef gave an Indian twist to the Spanish delicacy of Tapa and made Murgh Makhani Mille Feuille.
Shaukat opted for murgh makhani, which is also known as butter chicken, as the main dish for the competition. She said it perfectly represented India’s taste, colour and vibrancy.
Elaborating more about her dish, Shaukat said, “Since it was a Tapa-making competition, the dish had to be bite-sized. I added a burst of flavour to it by incorporating components like mint caviar, onion and beetroot viel & papadums”.
Posting about her achievement online, Shaukat wrote: “What an experience and an eventful week it has been! An absolute honour and proud moment to be representing my colourful land India & achieving 4th place at 7th World Tapas Competition!”
In an ode to both Indian and Spanish cuisine, she also made smoked saffron labneh, as saffron is also a culinary favourite in the Spanish cuisine. She added puff pastry as the base of the dish, using her patisserie expertise.
The 7th edition of the competition took place in the city of Valladolid.
