Available for both lunch and dinner on Mother’s Day and Father’s Day weekends, the exceptional menu presents a wonderful experience to celebrate and honour parents.

Begin with a trio of appetisers, featuring the succulent Australian Scallop with Tomato & Passion Fruit Dressing in Crispy Shell, fiery and aromatic Sichuan-Style “Ma La” Iberico Pork Char Siew, as well as Chilled Abalone with Scallion Sauce, a refreshing balance of umami richness complemented by the slightly sweet and sharp scallion sauce. Reinvigorate the palate with Double-boiled Fish Maw Soup with Black Truffle, Conpoy & Peach Gum, a nourishing yet delicious broth.

Savour delectable and comforting main courses, including the tender, velvety richness of Crystal Prawn with Steamed Egg Custard, Homestyle Slow-cooked “Ma You” Fish with Glutinous Rice Cake, and Stuffed Braised Tomato with Wild Mushroom with Golden Pumpkin Broth.

● Exquisite North Indian dining at Tiffin Room 

In celebration of mum and dad on 11 May and 15 June, Tiffin Room presents a crafted set menu made available for lunch and dinner, presented in both vegetarian and non-vegetarian selections.

Showcasing a plethora of intricate flavours and aromas, the three-course culinary journey begins with Ragda Patties, hearty potato patties simmered in chickpea curry and served alongside a selection of chutneys followed by tenderly grilled Afghani Murgh Tikka. Guests may also opt for Tandoori Pudhina Aloo, a mint-flavoured potato rendition for a vegetarian alternative.

Delight in an array of innovative North Indian main course classics presented at both lunch and dinner including, Kerala Fish Curry, featuring red snapper with coconut, aromatic mustard seeds and tamarind; Kashmiri Lamb Roganjosh, lusciously marinated lamb chop with fragrant spices; Jhinga Biryani, where Indian basmati rice is paired with prawns, mint leaves and cardamom; and Tiffin Dal Makhani, a hearty organic black lentil curry.

The vegetarian menu also presents a scrumptious series of main courses such as Zafrani Paneer Kofta, Indian cottage cheese dumplings simmered in curry, cashew nuts and spices; Makai Saag, a vibrant blend of fresh mustard greens and baby corn stewed in a savoury gravy; and Gucchi Aloo Ki Tehri, fragrant Indian basmati rice served alongside potato, morel, mint, and coriander leaves.

Both menus are served with an assortment of chutneys and pickles to complement the experience, alongside a selection of freshly prepared flatbreads, including fragrant Butter Naan and Laccha Parantha, perfect for scooping up the delectable curries.

Cap off the celebratory feast with Acarigua Raspberry Cremeux, a harmonious balance of wonderful textures and flavours.

● Mother’s Day IMUA experience at Butcher’s Block

Revel in the artistry of avant-garde wood-fire cooking, shaped by Chef de Cuisine Jordan Keao’s Hawai’ian heritage, whole animal butchery and zero waste philosophy. For Mother’s Day, Butcher’s Block presents a five-course lunch menu and a six-course menu for dinner, spotlighting the finest selection of meats, seafood and fresh vegetables, all expertly transformed through wood-fire.

Begin the meal with the popular duo of Big Eye Ahi Tuna Poké, a refined take on the well-loved Hawai’ian poké classic, and Wagyu Beef Pipikaula, which spotlights beef fat-fried rice and a deeply umami Blackmore rump and chuck roll cured in aged garlic shoyu and dry-aged for 25 days.

An array of appetisers follows, including Lomi Lomi, an inventive take on a Hawai’ian classic showcasing smoked Japanese Hamachi cured in paprika, served alongside tomato sorbet, agua chile and finished with crispy Jerusalem artichoke, as well as a tantalising Grilled Big Eye Ahi Tuna. Continue the indulgence with the delightful main course – the Little Joe Tenderloin, a perfectly cooked, premium cut of tenderloin. It is paired with a rich, velvety English pea purée and chimichurri, adding a touch of sweetness and freshness that complements the tenderloin’s savoury depth.

Finally, enjoy Haupia, Chef’s interpretation of a classic Hawai’ian coconut pudding, served with fermented Ichigo strawberries, bits of macadamia nut crumble atop and a dollop of gula melaka ice cream.

For dinner, enjoy an additional main course, Huli-Huli Dry-aged Duck featuring dry-aged Malaysian farmed duck, a modern twist on the classic Hawaiian barbecue tradition. 

● Wood-fired specialties on Father’s Day

For Father’s Day, guests may look forward to a curated menu to celebrate the occasion, featuring the finest produce of the season and exceptional steak cuts accented by wood-fire.

Look forward to a dish created specially by Chef Keao to mark the occasion – a Grilled Stone Axe Wagyu Striploin, featuring a dry-aged MBS 9+ striploin cut artfully flambéed with Butcher’s Block’s exclusive cask of Eagle Rare 10 Year Bourbon Whiskey.

Guests may also indulge in beloved signature specials such as the Huli-Huli Dry-aged Duck, Lomi Lomi and brand-new snacks such as Taramasalata, featuring a pate of wonderfully smoked Ahi tuna piped into a bite-sized pain soufflé pillow with laksa leaf powder.

For dessert, delight in a refreshing Haupia from the IMUA menu, or an exquisite Baked Alaska from the a la carte menu, wherein layers of meringue, ice cream and cake are flambéed tableside with the same wonderfully oaky notes from the bourbon whiskey.
