Padma Lakshmi cooks up a special Indian meal to mark inauguration day for Vice-President elect Kamala Harris

US Vice-President elect Kamala Harris will on Wednesday make history, becoming the first woman, first Black and first person with South Asian roots to grace the office.

As the various ethnic communities she represents celebrate this moment in history, celebrity chef Padma Lakshmi marked the occasion by cooking up one her own, and Harris’, favourite South Indian dishes – Tamarind Rice.

"So in honour of our new vice president, Kamala Harris, I'm making today a typical South Indian rice that happens to be her favourite as well as mine," said Padma Lakshmi in a video posted on Instagram.

Padma Lakshmi, like Harris’ mother Shyamala Gopalan, was born in Chennai before migrating to the US at the age of 4.

Her nearly 12-minutes-long video shows her whipping up Tamarind Rice while explaining the traditional methods used to prepare this dish.
