Raffles Hotel Singapore is hosting a summer special — Citrus Afternoon Tea at The Grand Lobby — till August 4. On offer for guests is an aromatic spectrum of citrus flavours, featuring kaffir lime, pink pomelo, cedrat, finger lime, and yuzu sourced from across Asia, Australia, and France.

The Citrus Afternoon Tea at The Grand Lobby, which began in June, has been curated by Executive Pastry Chef Tai Chien Lin. The menu has an opulent spread of citrus-infused desserts, paired alongside well-loved savoury creations and home-baked scones.

Elegantly presented on a three-tier silver stand, the first-of-its-kind Citrus Afternoon Tea includes Kaffir Lime Chocolate Cremeux, featuring an invigorating burst of kaffir limes sourced from Thailand coupled with a velvety cocoa affair.

Pink pomelo, a well-loved tropical citrus fruit from Malaysia, presents a lovely blend of sweet and tangy notes complemented with a subtle hint of bitterness in the Pink Pomelo Cheesecake, an innovative rendition of a beloved classic dessert.

Discover the aromatic complexity of French Cedrat in the Cedrat Ginger Cake, a harmonious union of the zesty French citrus matched with the spicy warmth of ginger.

Guests may also enjoy Verbena Finger Lime Tartlet, accentuated with an aromatic and invigorating amalgamation spotlighting Australian finger lime pulp, meticulously folded in with lemon Chantilly and layered between delicate sablée.

Relish the luscious Strawberry Yuzu Rollcake, a delicate confection elevated by the vibrancy of Japanese yuzu accompanied with sun-ripened strawberries.

The citrus indulgence continues with a selection of delectable savouries, including Foie Gras Crème Brûlée with Grapefruit Espuma, a dynamic blend of richness with caramelised sweetness of the crème brûlée coupled with a lively burst of tangy grapefruit; as well as Smoked Salmon Blinis, dainty mini pancakes topped with subtly-smoked salmon and accented with kaffir lime jelly.
