
The colourful Indian festival of Holi is just around the corner, and sitting together for a large, lavish meal is as much a part of the Holi tradition as the customary gulal play.
Indians in Singapore — and everyone else, indeed — can enjoy a special Holi experience (up to 16 March 2025) curated by award-winning Chef de Cuisine Kuldeep Negi at Tiffin Room, Raffles Hotel Singapore.
Drawing inspiration from Chef Kuldeep Negi’s extensive travels across India, this limited-time multi-course dining experience captures the vibrant and colourful spirit of Holi, celebrating the rich flavours through a showcase of classic dishes and innovative creations.
The non-vegetarian and vegetarian menus can be paired with an exquisite alcoholic beverage.
Begin the feast with the traditional yoghurt-based Coconut Lassi drink, a refreshing blend of fresh coconut and yoghurt, setting the stage for a flavourful dining adventure. The appetiser course introduces Mawa Chaat, deep-fried milk dumplings made from Gulab Jamun dough, complemented by tamarind chutney, spicy mint chutney, and sweet yoghurt — an innovative take on a Holi favourite.

Up the ante with unique alcohol pairings such as La Margarita, a zesty and slightly sweet amalgamation featuring Volcan Tahona Blanco tequila, syrup and lime juice, perfectly harmonising the richness of the dumplings and tangy chutney. Indulge in inventive Holi classics like Machi Pakora, red snapper stuffed with cheese and aromatic spices, alongside Tangdi Kebab, a succulent grilled chicken leg kebab paired with mint chutney.
Vegetarians can savour Paneer Pakora, crispy Indian cottage cheese bites stuffed with spiced cheese, alongside Dahi Kebab served with peppery mint chutney. Cleanse the palate with a Domaine Vacheron, a crisp and elegant Sancerre Rosé made from Pinot Noir, its delicate minerality and bright acidity cutting through layers of warm spice, smoky indulgence, and velvety richness.
Continue the festive indulgence with an assortment of impressive main courses, including Tambda Rassa, a bold Maharashtrian-style fiery lamb curry infused with coconut, onion, and aromatic spices; Murgh Hara Pyaaz, boneless chicken leg curry simmered in homemade spices, spring onions and cashew nuts; and Jhinga Pudhina Pulao, saffron-infused Indian basmati rice cooked with prawns and fresh mint. Relish a few sips of Marqués de Murrieta, a classic Rioja Gran Reserva, offering an impeccable balance of fruity notes and acidity, enhancing the complex flavours of the curries.

For a delectable vegetarian experience, savour Kofta Dilkush, irresistible spinach and cottage cheese dumplings complemented by a luscious shallot reduction; Subz Hara Pyaaz, a hearty dish of simmered cauliflower, green peas, carrots and cashew nuts; and Gucchi Mushroom Pulao, fragrant basmati rice seasoned with white and morel mushrooms. Finally, delight in Chole Masala, an earthy and smoky white chickpea curry made available in both the non-vegetarian and vegetarian menus.
Each main course is complemented with freshly made Butter Naan and Laccha Parantha, alongside an assortment of chutneys and pickles, including Pudhina Peanut Chutney, Aam Chutney, and Nimbu Achar, adding an extra burst of flavour.
Crown the festive feast with a sweet finale of traditional Holi desserts. Enjoy Moong Dal Halwa, a golden warm pudding created from sweet yellow lentils; Gujia, deep-fried dumpling pastries filled with coconut and dried fruits; and Kalakand, a luxurious saffron-infused milk cake.
